Blogmas day 8 : the winter cookies




Hello there kittycats,

If winter isn't the perfect time of year for chocolate, I don't know when is. (Not that I only choose chocolate during wintertime.. Seriously, who would?)
So besides all the hot chocolates, chocolate fondue's and christmaschocolates. We all need a little brownie in our lives. But we also need something to dip in our tea. At least that's what I like to do with my cookies. How are you going to combine those two you may ask?
Well, the amazing Lily Pebbles introduced the world to the amazing brownie-cookie hybrid called; Brookies!
They're so delicious I want to fill up an entire bathtub with them and then eat them whilst watching something. They're crunchy like a cookie on the outside and soft as a brownie on the outside. You get the best of both worlds and they are drop death gorgeous. I know it's the inside that counts, but with these baby you get it all! They do take at least 5 hours to make, but hey! Everything you love it worth waiting for.

Here's what you need:
A big bowl
An electric mixer
A kitchenscale
Two teaspoons
A pasta plate (a big, deep plate)

The ingredients:
85 gram of cocoa powder
400 gram of caster sugar
125 ml of vegetable oil
4 eggs
2 teaspoons of vanilla extract
250 gram of plain flour
2 teaspoons of baking powder
1/2 teaspoon of salt
60 gram icing sugar

What to do:Mix the cocoa, caster sugar and oil in the big bowl. Then add the eggs, one at a time to the cocoa mixture.Stir in the vanilla extract. Mix the flour, baking powder and salt in the medium bowl, then stir that through the cocoa mixture.
Cover the dough and put it in the fridge for at least 4 hours!! I am so sorry, but that's the recipe.
After four hours:
Preheat your oven to 180 degrees celcius.
Fill the pastaplate with the icingsugar. Scoop a teaspoon full of the dough on to the plate (use the second teaspoon to get it on the plate). You will get little balls of chocolate on the plate with icing sugar. Roll the "balls" through the icing sugar untill it's completely covered. Then roll them the size of small marbles. Or big ones, whatever you prefer. Do this untill you've finished all the dough.

Line a bakingtray with some non sticky bakingpaper and bake the Brookies for 10 -12 minutes.
Let them cool off before scooping them onto a tray/plate and serve with a cup of tea/milk/on it's own.
To be shared or eaten alone.
This recipe makes about 70 of these babies, so be carefull if you don't want to eat them for the rest of the month. Who wouldn't..
