Life with cookies; Oatmeal



Hello there kitty cats,

With this colder weather there are a couple of things that HAVE to happen; big scarfs, candles and cookies.
So in honor of not only autumn, but also #2yearswithconfetti I thought I'd share my healthy, yet very tasty and chocolate-y (it would be rude not to, right?!) recipe for very simple and easy oatmeal cookies with cranberries.
Unfortunately this recipe isn't a Romy original, but nonetheless it's a good one!

What you need:
A kitchenscale
Measurement cups
A big bowl
A medium bowl
A small glass or alluminium bowl (something heatprotective)

Ingrediƫnts:
200 gram  oats
25 gram butter
4 tablespoons honey
55 gram of crushed coconut
1 teaspoon of bakingpowder
3 tablespoons of dried cranberries
50 gram of extra dark chocolate (72 % cocoa)

What to do:
- Preheat your oven to 190 degrees celcius
- mix the oats, butter, honey, coconut and bakingpowder with a pinch of salt in a big bowl.
- Add 125 ml hot water and mix it untill it's a soft dough
- Add the cranberries and stir through the mixture

- Roll 24 balls the size of hazelnuts (and make them a little flat if you fancy, I personnallty like them round.. cute bitesized cookies)
- Put some bakingpaper on an baking tray and bake the cookies for 25 minutes, until golden-brown.
- Let them cool off for 1 hour.

- Melt the chocolate au bain marie ( so cook some water, pour it in a small bowl and let the medium bowl with the chocolate stand on top of it, not touching the water, so the steam can melt the chocolate. Stir and check every other minute)

- Get a spoon and dip it in the melted chocolate. Make sure the chocolate drips off when you pick the spoon up. Now are you ready? Let's decorate. Just swoosh the spoon around the baking tray so all the cookies get stripes of chocolate on them.

Let it all cool off for 2 hours or until the chocolate is hard and serve them to your(self/) guests.
